The ox knife borrows the shape of the chef’s knife. The long and narrow blade saves effort when cutting, and does not require too much front and rear push and pull, and the pointed blade can better perform fine straight knife cutting. Compared with Western-style chef’s knives, the biggest advantage of the Ox knife is its lightness. The weight of Western-style chef’s knives is generally above 200g, and the weight reaches 250g, while the weight of the Ox knife is generally within 200g, which is more comfortable to use.

Generally speaking, you can choose one of the bull knife and the Santoku knife as the main knife. The length of the ox knife blade and the curvature of the blade are more suitable for cutting large pieces of meat, while the Santoku knife will be more comfortable when cutting vegetables. However, it is worth noting that neither of these can be used to chop bones.
